Much Ado About Fooding: Equipment - Microplane 40020 Grater/Zester ...

"Last September, I built up the courage to make an orange souffle, which called for a generous tablespoon of orange zest. I consulted with my fellow foodies on the Internet (i.e., Googled "How to zest oranges"), who told me to peel the skin off the orange and scrape away the pith (bitter white part) with a paring knife. This worked well, but the 10 minutes that were spent scraping away pith could've been spent on more important things (like making the actual souffle). Later that night, I went back online and did some more research on how to zest citrus fruits. That was when I discovered... *dramatic pause*... the Microplane. I am usually a sucker for cool kitchen gadgets, but I left this item on my Amazon wish list and never bought it because I don't use orange or lemon zest that often. A few weeks ago, however, I bought a block of parmigiano reggiano and wanted something that would create those beautiful strands of cheese that you often see in pasta cookbooks and food blogs....

Passion for Food: Winter can't chill citrus appeal

Those appealing, easy-peeling “Cuties” or Clementines have kept our family in a super citrus experience all through the holiday season: Now these little beauties have plenty of company with the citrus season in full swing. Oranges in multiple varieties can make it hard to choose.

The appropriately named seedless navel varieties, the juicy Valencia and the red flesh of blood oranges perk up produce aisles. Orange cousins such as Minneola tangerines with flawless deep orange skin and bump on the end bring their own interesting flavor to citrus selection. Lunchbox- and snack-perfect Clementines are the ideal take-along fruit choice.

Big, plump lemons and limes have multiple uses for those of us who love to cook. They can have star billing in drinks for those who seek libations and those who don't. Squeezed fresh is always great especially if you have a juicer for larger quantities or a simple reamer. Cooks and citrus lovers alike have long appreciated this simple tool for extracting juices. Even tiny Key limes can be juiced with a reamer. This inexpensive tool is one kitchen gadget I couldn't live without.

With the bit you cut off, twist the peel over a completed drink. A zester or microplane is finer than a cheese grater. Just run the fruit gently over the grater. Then give the grater a little tap. All the zest will fall right in the drink.
