Strawberries are the first fruits to ripen in spring. You’ll find them in abundance at the market and the prices will be as sweet as their flavor. If you have more strawberries than you can use, they are easy to freeze. Just remove the stem and caps. Sort and wash (do not soak) those berries that are firm, dark and fully ripe. Dry them with a paper towel, then freeze in single layer on a cookie sheet. When they are completely frozen, place them into freezer containers or zip-lock freezer bags. If wrapped properly, frozen berries will keep for about a year.
If you’ve never eaten a Norwegian krumkake, strawberry season is a good time to indulge. Krumkakes are made from a batter that is cooked on an embossed krumkake iron, rolled into a cone with a wooden cylinder and then filled with whipped cream, custards, ice cream and just about anything else you can dream up. Krumkakes may be flavored with cardamom, lemon or vanilla and can be offered as a light dessert in a variety of ways. The ones pictured here were made on a Nordic Ware Krumkake Iron, one of the first ethnic bakeware products produced by the family-owned company. Nordic Ware, best known for its bundt pan, has been an American manufacturer of kitchenware products since 1946.
