Avoca woman crams carrot cake goodness into cookies
Emily Supeck had a feeling she could take the general concept of carrot cake and translate it into cookie form.
How right she turned out to be.
Mrs. Supeck won this week's Local Flavor: Recipes We Love contest, thanks to her unorthodox yet delicious Carrot-Oatmeal Cookies recipe. The Avoca resident received a $75 gift certificate from Rossi's ShurSave Market in Old Forge.
Mair Thomas of North Scranton was awarded the $25 runner-up prize for her Welsh Cookies recipe, which can be found online at www.thetimes-tribune.com/localflavor.
Mrs. Supeck admits to doing "a lot of crazy things" in the kitchen. Over the years, she's made everything from homemade ice cream cakes to chocolate Easter eggs.
A longtime lover of carrot cake, she thought a cookie version could be "interesting." When she couldn't find any recipes for such a thing, she figured she'd just come up with one on her own.
In addition to many of the ingredients found in a traditional carrot cake - nutmeg, cinnamon, cloves, walnuts, raisins, cream cheese frosting and, of course, grated carrots - she added rolled oats. She can't quite remember why, other than it seemed like it would make a good addition.
